By incorporating chocolate into dough that's been allowed to rest in a warm spot until it gets above 95°F (near my preheating oven worked), or by gently stirring already-made cookie dough that's been warmed to above 95°F, you end up dispersing some melted chocolate throughout the works.

This may be a good thing for some folks, but I like my cookies to have a nice balance between the two. I settled on a ratio of 65 ounces flour to 8 ounces of butter.

In the cookies above, the batch on the left was made with 5 ounces each of white and brown sugar. The batch on the right was made with 5 ounces of brown sugar, 9 ounces of white sugar, and 6 ounce of corn syrup. A substitution of only 65%.
